Oat and banana pancakes

These pancakes are highly adaptable and a great pre (or post) training snack

These pancakes are highly adaptable and a great pre (or post) training snack!

(Makes about five pancakes)

Ingredients: 

  • 1 egg
  • 1 medium banana
  • 2/3 cup milk
  • 1 cup oats
  • 1/2 cup any flour (can be substituted for another 1/2 cup oats)
  • 1 tsp bicarbonate of soda
  • 1 tsp vanilla extract

Method:

1 – Place all ingredients in a blender and blend until smooth.

2 – Pour about 1/2 cup at a time onto a lightly greased pan.

3 – Cook until the top bubbles and then flip.

4 – Serve with your choice of topping – we went with Greek yoghurt and blueberries (and a little syrup because it’s pancake day) but you can use anything you like – more fruit, seeds, nuts, anything!
